Shahani Dates, scientifically known as Phoenix dactylifera cv. Shahani belonging to the Palmaceae family, is the ripe fruit of date palm trees. It is elongated in shape with a narrow tip and exhibits a yellow to light brown coloration. Shahani Dates fall into the category of soft dates. This date is considered medium-ripe, and its Kharak (the Khalaal stage) typically appears yellow.
Thanks to their high sweetness, Shahani Dates can be enjoyed at various stages of ripeness, including kharak/Khalaal (the crunchy stage), Rutab (the semi-ripe stage), and fully ripe dates(the Tamr stage). It is particularly prized for its natural sweetness and appealing color, making it a popular choice for consumption, both domestically and internationally.
Shahani Dates are not only enjoyed as a snack but are also used in the production of Date Syrup and Date Paste. These date-derived products are used widely applications in the healthy food industry.
The cultivation of Shahani Dates is concentrated in the southern provinces of Iran, particularly in Fars and Hormozgan provinces. Within Fars, this date variety plays a significant role, accounting for approximately 95% of the date palm trees in Jahrom city. As a result, Shahani Dates are a vital and abundant cultivar in the Fars region, contributing to Iran’s date production.
The production process of Sayer Dates is as follows
Washing and completely drying all date pieces by machine
Sorting and grading all date pieces by machine
Double sorting of all date pieces for quality by hand
Pitting (if requested by customer)
Waxing/polishing all date pieces with food-grade oil (if requested by the customer)
Fumigation in an airtight vacuum chamber
Packing in bulk & retail/white labels/private labels
Wrapping plastic around the cartons (shrink wrap)
Loading into 20ft or 40ft dry containers
